Headline The Fight Against Malnutrition: Guatemala
Caption Description Founded early in 1946 under the auspices of the Pan-American Sanitary Bureau, which acts as the World Health Organization’s Regional Office for the Americas, the Institute of Nutrition of Central America and Panama (INCAP), with main offices in Guatemala City, is primarily engaged in studying human nutrition
and constantly carries out field surveys. Members of its field staff remaining with families for a seven-day period, observing market purchases of the house-wife and the preparation and consumption of food in the home. During such periods, the cooked food is weighed immediately prior to being eaten and a record is kept of the intake of each member of the family. As a result of this careful study of the diet patterns and the home environment in the areas it serves, INCAP has obtained a more precise concept of the origin and nature of the nutritional deficiencies it combats. In this work, the Institute receives
technical assistance from the World Health Organization.
Photograph shows INCAP field nurse Aida Mazariegos (right) with a young mother and baby in Amatitlan. Cradle is made of cane and string; the house is made of bamboo and thatch, with earth floor swept clean and watered every afternoon for coolness.
