Caption Description Founded early in 1946 under the auspices of the Pan-American Sanitary Bureau, which acts as the World Health Organization’s Regional Office for the Americas, the Institute of Nutrition of Central America and Panama (INCAP), with main offices in Guatemala City, is primarily engaged in studying human nutrition and finding effective solutions to the problems of malnutrition. Major areas of its work are clinical nutrition, dietary surveys, agricultural and food chemistry, clinical chemistry and pathology, physiology and nutrition research with animals. Health education is therefore a spearhead in INCAP's campaigns against disease and nutrition education is applied at all levels. INCAP’s field staff carries out surveys, which include remaining with a family for seven days and recording purchases of food made by the housewife, observing preparation and consumption of food and recording intake of each member of the family.
